Our Story

The name Needs Nam Pla comes from a deeply personal story about love, culture, and authenticity. As a mixed-Thai woman, our founder, Mallory, grew up with a deep respect for traditional Thai cuisine, where fish sauce (Nam Pla) is an essential ingredient. When her husband, Stephen—raised in Utah—first asked her to cook Thai food without fish sauce, it sparked an important realization: true cultural experiences shouldn’t be altered to fit personal preferences; they should be embraced as they are. Over time, Stephen learned to appreciate Thai food in its authentic form, just as we encourage travelers to embrace the world with an open mind and a willingness to learn.

Today, Stephen has become the primary chef in their home, dedicated to perfecting authentic Thai recipes using the freshest ingredients available. He extensively researches, tests, and verifies his cooking with Mallory’s Thai aunts and father, ensuring that every dish remains true to its origins. Through his passion for recreating the flavors of Thailand, their home has become a place of cultural connection and nostalgia—a way to bring the warmth of Mallory’s homeland into their daily lives. Together, they continue to dream of moving to Thailand one day, deepening their connection to its rich traditions and stories.
